THE PRODUCTION CHAIN

Cultivation of the vegetables, spices and olives according to the methods of the organic agriculture.

The Vegetables produced are: Tomatoes, IGP Pachino cherry tomatoes, chilly, eggplants, peppers, zucchini and onions, which are harvested at the right time, than washed, selected by hand cut in small cubes, slices or à la julienne and pickled for about 10 minutes.

The vegetables undergo the sun drying process, through the natural water evaporation (until 95%), arranged on frames located in hot-houses equipped with a ventilation system which assures a constant temperature, especially in Summer.

After the control of the drying level, the vegtables are collected and deposed in refrigeration cells. Successively they will be preserved into extra virgin olive oil or transformed in condiments for pasta, rice and sauces.

SAUCHES AND CONDIMENTS IN EXTRA OILVE OIL FOR PASTA, RISOTTI AND BRUSCHETTE

The sun dried vegetables destined to be preserved in extra virgion oil olive are washed with 100° C hot water and than prepared according the recipes of the Sicilian tradition using natural herbs & spices ( oregano, garlic, basil, parsley, red chilly), filled in glass jars and sterized at 120° C.

MIX OF DRIED VEGETABLES FOR SAUCES, CONDIMENTS & SALSAS

The sun dried vegetables destined to prepare mixes of ingredients and condiments for rice, pasta and sauces are blende and packed in bags.

COMPANY WITH A CIRCUIT SYSTEM, PRODUCTION CHAIN CONTROLLED FROM THE FIELD TO THE FINISHED PRODUCT.
